TISK, Berlin

TISK was a recipient of Michelin Bib Gourmand for a few years (up to 2022) and establishes itself as a restaurant serving modern German cuisine.

During our visit, the restaurant presented us with a choice between two distinguished menus: Old Friends’ Menu (OF) and innovative TISK Menu (T). With the option to indulge in either a sumptuous four-course or a lavish six-course meal, we decided to opt for the lighter yet equally tantalizing four-course offering.

Sourdough Bread Butter, Onion

(OF) Kale & Crackers Kale, Crackers, Onion An exquisite blend of creamy sausage foam, crispy kale and mustard seeds. I guess this dish might be somewhat inspired by Grünkohl mit Pinkel, which is kale with Pinkel sausage – a regional delicacy of Northern Germany.

(T) Jerusalem Artichoke Onion, Corn This dish featured a delicate espuma (foam), complemented by the earthy flavours of artichoke, crispy texture of fried onion, sweetness of corn, all enhanced by a drizzle of aromatic leek oil.

(OF) Waxy Organic Egg Mustard, Pave, Mustard Seeds (replacement of Hemp seeds).

(T) Havel Bouillabaisse Fennel, Rouille, Saffron A rich and flavourful seafood stew featuring harvests from Havel, a river in northeastern Germany, enhanced with the aromatic notes of fennel and saffron, topped with rouille.

I’ve learned that in Berlin, pork knuckle is commonly served with pea puree, sauerkraut, potatoes and mustard, so this next dish could be a nod to that traditional preparation. (OF) Pork Knuckle (Eisbein) Pea, Potato, Horseradish.

(T) Poussin Red Cabbage, Jus, Mushroom A dish that balances savoury and sweet flavours with the earthiness of mushrooms complementing the tender spring chicken and the acidity of the cabbage.

(OF) Quince Apple, Long Pepper, Oat The dessert featured quince ice cream accompanied by a smooth apple sauce infused with the subtle spiciness of long pepper and paired with generous dose of crunchy oats for texture.

(T) Miso Ice Cream Black Garlic, Chocolate Miso ice cream is a unique frozen dessert that incorporates the savoury, umami-rich flavour of miso paste into a creamy ice cream base. Paired with beetroot and sweet-savory taste of black garlic and decadent chocolate.

Overall, it was a satisfying meal and everything suited our palates. Plus, it offered great value for money.

Memorial to the Murdered Jews of Europe also known as the Holocaust Memorial.

The Ampelmännchen which translates to “little traffic light man” in English, is an iconic symbol of Berlin. The logo is used on traffic lights in the eastern part of the city to distinguish former East Berlin from West Berlin. Interesting to know that the generally plump figure of the Ampelmännchen served more than just aesthetics but that of safety and functionality, because a larger area means more light, and as a consequence, better visibility and thus greater safety for pedestrian.
